Poached eggs with lemon pepper tuna and broccolini
I try to eat protein and vegetables at every meal. It’s not always possible because, let’s be honest, there is only so much you can eat in a day! I don’t know about those healthy eating guidelines – think about all the food you are ‘recommended’ to eat in a day. Seriously, visualise it. Between your carbohydrates, proteins, fats, dairy, fruit and vegetables, and ‘discretionary’ food items (as they now call them) – it’s a lot of food! I believe everybody is different and you need to listen to your body. The reason I aim for protein and vegetables at every meal is because these food tend to be as close to nature as possible. Meat, nuts, eggs and vegetables – not a lot of scope for processing, added sugar or artificial colours, flavours or preservatives! So, what better start to the day than with a big, healthy breakfast of protein and vegetables!
1 teaspoon of olive oil
95gm tin of tuna (in springwater or brine)
5 stems of broccolini
Small wedges of fresh lemon
Salt and pepper to taste
Meanwhile, pan-fry tuna and broccolini in olive oil on the stove over medium heat until broccolini begins to wilt and tuna is warmed.
While tuna and broccolini are still in the pan, sqeeuze lemon over the top and sprinkle with a little pepper.
Transfer broccolini to a plate. Top with tuna and eggs and sprinkle with salt and pepper to taste.
