The best Cheese and Spinach Quiche since sliced bread
This is a great go-to dish when you have an over-supply of eggs or when you have zero time to cook dinner. It’s crustless too – saving you even more time! Quiche is a fantastic meal to cook ahead of time and the leftovers are always a popular option for work and/or school lunches. 2 cloves of garlic, crushed
1 brown onion, diced
4 rashers of bacon, diced
1 bunch of spinach, torn and stems removed
4 medium mushrooms, sliced
3/4 cup of grated cheddar cheese
1 teaspoon each of salt and pepper
2 slices of Jarlsberg cheese
Place onion and garlic in a large fypan over low heat until onion is translucent.
Add bacon and stir until soft.
Add spinach and stir until wilted.
Combine eggs,cheese, salt and pepper in a large bowl and whisk until combined.
Add contents of frypan plus the mushrooms to the bowl and stir to combine.
Pour into a 23cm pie dish and top with sliced Jarlsberg cheese.
Bake for about 20 to 30 minutes or until the top of the quiche is golden and it is slightly crisp at the edges.
Enjoy with a crisp garden salad!
