Shredded kale, bacon and walnut salad will blow your guests away
For something a little bit fancy but still as easy to whip up as a trusty old garden salad, try this shredded kale, bacon and walnut salad. It’s incredibly tasty, hearty, simple to make and can easily be made a day ahead.
I was having a small party last night with half a dozen girls and forgot that morning to get some meat out of the freezer for dinner. Work has been flat out, I had to pick up the dry cleaning on my way home, and I am off this morning for a week in Sydney (still yet to pack!), so there was not a lot of time to fuss about in the kitchen to prepare for my visitors.
Luckily, I had a garden salad in the fridge that I’d prepared the night before to which I added some avocado and fried haloumi to beef it up a bit.
Then, I whipped out the ingredients below and freestyled my way to a new creation. The result? A hearty, healthy and incredibly satisfying salad which was an absolute hit! Everyone asked for the recipe, so I figured I must share it with you too!
1 bunch of kale, stalks removed, shredded
4 rashers of bacon, chopped
1 cup of walnuts, roughly chopped
2 handfuls of goji berries
Olive oil, salt and pepper, to taste
Cook bacon on a non-stick frypan over medium heat until crispy. Remove and set aside.
Without cleaning the pan, add kale and fry until the leaves brighten in colour. Transfer to a serving bowl.
Add walnuts to pan and toss, constantly, until you can just start to smell them and remove immediately (you don’t want burnt nuts!).
Top kale with bacon, nuts, goji berries and drizzle with olive oil. Add salt and pepper to taste then toss to combine.
This salad is great fresh or made a day ahead (I’m eating the leftovers for breakfast as we speak!).
