Paleo mango ice-cream – a healthy, dairy-free dessert
Summer isn’t summer without ice-cream. I could eat ice-cream just about every day (whether it’s summer or winter, for that matter). Yep, it’s my vice (along with chocolate and coffee!). If, like me, you love ice-cream, you can’t go past a Mango Weiss Bar during summertime. Or can you? This mango ice-cream recipe is healthy, paleo friendly and dairy free!
You can whip up this mango ice-cream for a quick, sweet treat for one, or make in bulk (just double, triple, or quadruple the recipe) and pour into ‘popsicle moulds to bring out when the heat of the summer sun has you begging for a cool relief. Maybe you’d enjoy this recipe for Christmas Day? Something different anyway, and very Aussie Christmas-like
1 mango, skin removed, flesh roughly chopped, frozen (I buy bruised mangos because they’re cheaper and prepare them for this recipe in advance)
2 tablespoons of coconut cream (store the can in the fridge and use the solid cream that rises to the top)
1 handful of raw cashews
Add all ingredients to a food processor and blend until just smooth. Transfer to a serving bowl and place in the freezer for five minutes before enjoying. This gives you enough time to wash up and for the ice-cream to slightly set.
